ZUCCHINI-COCONUT BREAD 
2 c. sugar
3 eggs
1 c. oil
1 c. nuts
3 c. grated zucchini
1 1/2 c. grated coconut
2 tsp. vanilla
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt

Mix in order. Beat well. Pour into 2 greased and floured 9x5x3 inch loaf pans. Bake at 350 degrees for 1 to 1 1/4 hours or until tests done by toothpick test.
