SMOTHERED PORK CHOPS 
6 pork chops (bone-in or boneless)
1 small or medium onion, chopped
3/4 cup sliced mushrooms
2 cloves garlic, chopped
1 (10 oz.) can cream of mushroom soup
beef broth or stock (optional)
2 tsp. olive oil
seasonings of your choice, to taste

Heat frying pan with olive oil. Sauté onion, mushrooms and garlic in olive oil over medium heat until onions have caramelized.

Season pork chops to taste (I usually use garlic salt, seasoned salt and black pepper) and cook in pan until brown on both sides.

Transfer the pork chops to a baking dish and set aside.

In the same pan, add cream of mushroom soup being sure to scrape the sides of pan to get the flavor from the onion, mushroom and garlic. Add beef broth if consistency is too thick for your liking.

Smother the pork chops with the soup mixture then cover pan with foil.

Bake at 350°F until chops until done, about 15 minutes.

These smothered pork chops are a delicious and easy recipe to make for dinner. I love the savory flavor of the onion, mushroom and garlic in the sauce. It's a great way to dress up a basic pork chop! I used bone-in chops and they were tender and moist, but you could also use boneless for an easier meal.
