PANCAKES FROM SCRATCH
1 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 tbsp. sugar
1 egg, slightly beaten
1 c. milk
3 tbsp. melted butter, butter, or oil

Stir flour, sugar, salt, and baking powder together in mixing bowl. Add slightly beaten egg, milk, and melted butter; beat until well mixed. Batter is better if it is still a little lumpy. Lightly oil a griddle or skillet and heat over medium hot fire. Pour or spoon out on griddle to form saucer size pancakes. Cook until bubbles form on top surface; turn the pancake and cook until lightly browned.
