PANCAKES FROM SCRATCH 
1 c. plain flour
1 c. buttermilk
1/4 tsp. salt
1/4 tsp. baking soda
1 tbsp. sugar
1 tbsp. melted butter
1 egg

Mix together and pour onto heated griddle or fry pan; turn once. Keep warm until served. These are very light and delicious.

Hi Veronica,

Check to see how old your baking powder is. Also, you can't use plain milk in this recipe as a substitute for the buttermilk unless you add a 1/2 teaspoon of vinegar, or else you can use baking powder instead of baking soda.

I'm not sure what the rest of you are up to, but this recipe is plain awful. If you are trying to make pancakes this will not do it. This will make crepes or very thin griddle cakes. Which will annoy you to no end if you are actually trying to make pancakes and are trying to keep adding flour to make the batter have a better consistency.

You can substitute buttermilk by mixing 2 tbs vinegar to 1 cup milk and letting it set up for 5 minutes
