PANCAKES FROM SCRATCH 
1 c. self rising flour (if using regular flour add 1 tsp. baking powder)
1 egg
1/2 - 2/3 c. milk
3/4 tsp. salt
2 tbsp. sugar
1/4 - 1/2 tsp. vanilla

Blend in blender or mix by hand until it's thick and smooth. Melt 1 to 2 tablespoons Crisco in fry pan. Pour pancake mixture into pan, usually 3 pancakes fit in 11" fry pan. The key to fluffy pancakes is to put them into hot skillet, then turn the heat down very low and cook them slowly. When bubbles start to form almost to the top, flip them and cook the other side until brown. Try different varieties. Use wheat flour rather than white or add blueberries. Makes 7 to 8 pancakes.

The best pancakes I've ever made! My family loved them. I did leave out most of the salt and added ground flax seed and spice. Next time I'll try ground pecans. YUM!

Great, I have stupidly purchased pancake mix and bisquick or even worse frozen pancakes for ages, figuring "from scratch" would be awful to make. NOT SO. These beauties were amazing. I used margarine on my fry pan which is a bit salty with the salt in the mix. Next time I will add a pinch if that of salt. Just made them for my dad as a treat for breakfast before his early workday and he really enjoyed them and said they were the fluffiest he had ever had. We always use Southern Biscuit Self-Rising flour.. this will make the menu from now on!!

So Yummy! Have my grandchildren for the day since school is now out and asked them what they wanted for breakfast - Pancakes!! Nana they said. Well I had no Pancake mix so did a search for Pancakes from scratch. I'm almost embarrassed that this was so easy. Never box mix again. I added some big blueberries. Great recipe. Thank you for posting. Based on reviews saying they were a little salty, I used only 1/4 tsp of salt and added cinnamon. Tasted great!
