PASTA WITH OLIVE OIL AND GARLIC 
1 lb. spaghetti or vermicelli
3/4 c. virgin olive oil
6 cloves garlic, chopped
1 1/2 tsp. salt
Freshly ground pepper
4 tbsp. finely chopped parsley

In a skillet heat the oil, add the garlic, and cook just until garlic begins to color (do not brown garlic). Add the salt, pepper and parsley. Stir well and remove from the heat immediately. This should take only several seconds. Toss with pasta cooked al dente. Serves 4.

This is one of my favorite "comfort meals" and I like trying variations by adding different ingredients. My favorite is to add 1 tsp crushed red pepper, 1/2 cup chopped sun-dried tomatoes and some lemon pepper to the oil mixture. I then toss with some Parmesan cheese, pour a glass of my favorite Merlot and then get out of my way cause it is time to eat!

We love this recipe - I adapted to our taste and added 5 chopped anchovies and a couple of chopped tomatoes but the base recipe is delicious!
