EPIC SEAFOOD ALFREDO SAUCE | |
1 1/2 lb. shrimp, peeled and deveined 1 (6 oz.) lobster tail. de-shelled and cut into chunks 1 (6 oz.) can crab meat, drained 2 tbsp. butter 1/4 cup olive oil your favorite pasta (prepared according to package directions) freshly ground black pepper, to taste parsley flakes HOMEMADE ALFREDO SAUCE: 1/2 cup (1 stick) butter 1/4 cup all-purpose flour 3 cups half & half 2 egg yolks 6 oz. (about 2 cups) shredded Italian cheese blend (such as Romano, Parmesan, Asiago, Provolone, Fontina and Mozzarella) Melt butter in a medium saucepan. Add flour to make a thin roux, stir until golden. Whisk yolks into half & half. Add to golden roux and stir constantly. When liquid starts to steam add cheese and stir until constantly until cheese is completely melted. When sauce starts to thicken add crab meat, cover and set aside. Simultaneously heat 2 tablespoons butter in a skillet until melted, add olive oil. When mixture starts to smoke add shrimp and lobster chunks, sauté until lightly browned. Pour sauce over you favorite pasta (I prefer linguini) and top with lobster and shrimp.
