CHEESY MACARONI SALAD

Simple ingredients that create a fantastic sweet & sour type macaroni salad.

1 (7.25oz) box macaroni & cheese dinner
2 tbsp. butter
1 slice from lg. onion, diced
2 heaping tbsp. sweet pickle relish
1/2 lg. cucumber, sliced and diced

Dressing:

2 heaping tbsp. mayonnaise
2 tbsp. sugar
1 tbsp. vinegar

Cook pasta until done. Drain; add butter and cheese pack. Stir together until ingredients are combined. Mixture will seem dry. Add the diced onion, cucumber, and the sweet pickle relish.

In a small separate bowl, combine dressing ingredients. Pour dressing over the pasta, diced pickle and onion. Mix completely.

Refrigerate for a couple of hours until flavors have blended. You will never want regular Macaroni Salad again.

When I submitted this recipe - I forgot to mention... the dressing is also "perfect" dressing for coleslaw. Shred 1/2 head cabbage 1 lg. carrot... put this dressing over. It is 100% exact recipe that KFC used at one time.
