ZUCCHINI CASSEROLE 
4 c. zucchini, sliced or chunked
1 egg
1 c. Cheddar cheese, grated
2/3 c. Miracle Whip
1 onion, chopped
1 green pepper, chopped
1/2 stick butter
crushed cracker crumbs (to cover casserole)

Place 4 cups zucchini in saucepan in cold water. Bring to boil, then drain well (don't cook). Mix all ingredients together except crackers. Pour into greased casserole dish, last cracker crumbs. Pour melted butter over top.

Bake at 350°F for 30 to 40 minutes.

Bits of cooked ham or chicken may be added to make complete meal.

As a retired husband I tried it and we loved it! I would serve this to family and friends at any time. The only modification I made was to use 1/2 green and 1/2 red pepper to add some color. Delicious!

I'd give this even more stars! Awesome! Had to change it up a bit due to what I had on hand - 6 cups zucchini, 4 eggs, 1 cup mayo, celery instead of green peppers, 1/2 cup shredded Mexican cheese, 1/2 cup mozzarella and a couple of Swiss cheese slices. Used a packet of ground Ritz crackers wuth 3/4 stick of butter and added leftover cubed pork loin. Great first time, Fantastic leftovers. Definitely a fabulous way to use zucchini!
