POTATO PANCAKES 
1/4 cup milk
2 eggs
1 onion, diced
1 1/2 tsp. salt
1 1/2 cups uncooked potatoes
1/4 cup flour
1/4 tsp. baking powder

Cut potatoes into 1/2-inch cubes. Blend all ingredients for 5 seconds in blender. Bake on greased, hot griddle.

Makes 12 (3-inch) cakes.

You could try adding Fruit Fresh or Vitamin C or lemon juice but what usually happens is the liquid separates out and the potatoes start to brown progressively as they are exposed to air. It would probably be better to cut the recipe by half, or else cook the entire recipe, then freeze the cooked pancakes.
