SIMPLE POTATO PANCAKES 
5 large white potatoes (Idaho is the best)
1 large onion
1 to 2 green peppers
2 eggs
salt and black pepper, to taste
garlic powder, to taste
oil in a pan to fry

Grate the potatoes into a paper towel or a clean kitchen towel and squeeze most of the water out.

Cut onion and pepper to about 1/4-inch dice and mix in bowl with the potatoes you squeezed.

Add the eggs and mix with either a sturdy spoon or with your hand (how your grandmother would do it). Mix until it is able to stick together. You may need to add more or less eggs depending on size of eggs and potatoes.

Add in the salt, pepper, and garlic powder and mix in.

Heat about 1/4 inch of oil in a sauté pan. You can test if the oil is ready by taking a shred of potato and putting it in oil. If it bubbles and sizzles it is hot.

Form pancakes, take a handful of the mixture and form it in to a patty and place in oil. BE CAREFUL not to splash yourself.

When the side you put down first is golden brown flip it with a heat resistant spatula, again be careful not to splash yourself.

When the second side is golden brown remove from oil and place on a paper towel to drain off excess oil.

Serve and eat!
