POTATO PANCAKES 
1 Russett potato, peeled and grated
1/4 cup olive oil

Heat olive oil on medium high. Add uncooked grated potatoes, stirring and flipping constantly. As the grated potatoes begin to brown, they will start to stick together. Use pancake turner to separate into patties. When browned to your liking, place on paper towels to absorb excess oil. No pre-cooking of potatoes required. Add your favorite toppings and enjoy!
