POTATO PANCAKES | |
1/4 cup milk 2 eggs 1/2 small onion 1/4 tsp. each garlic and onion powder 1 tsp. salt 1/4 cup flour 1/4 tsp. baking powder 2 cups raw potatoes, peeled and cubed Put all ingredients except potatoes in blender or food processor and process until smooth. Add potatoes and blend until potatoes are grated. Do not overblend. Note: If a food processor is being used, the pancakes may be made by processing all ingredients other than potatoes and onions using the metal blade; remove the blade and fit the coarse grating disk (leaving the contents in the processor). Alternatively, grate the potatoes and onion into the bowl over the other ingredients. If grating the potatoes by hand, roll them up in a clean cloth and squeeze as much liquid out as you can (discard the liquid). Pour batter onto a hot, well-greased griddle and brown on both sides, pressing down on pancake with a spatula or flipper. These should be thin. Spread with butter, applesauce or sour cream.
