PINEAPPLE BAR COOKIES 
1/2 c. soft butter
2 c. sugar
4 eggs
1 1/2 c. flour
1 tsp. baking powder
1/8 tsp. salt
1/4 tsp. baking soda
1 (8 1/2 oz.) can crushed pineapple, well drained
1/2 c. chopped nuts

Sift dry ingredients. Cream shortening and sugar well; add eggs and beat. Stir in dry ingredients. Add pineapple and chopped nuts. Place batter into a lightly greased 9 x 13 inch pan. Bake at 350 degrees for about 40 minutes. Cool before cutting into bars. Frost with butter icing if desired, or sprinkle with confectioners sugar.

My mom used to make these all the time when I was a small child. They are wonderful, more cake like than cookie, and so moist! She always sprinkled powdered sugar over them. The recipe was lost over the years, so happy to find it again!
