FIG BAR COOKIES 
1 1/2 c. chopped dried figs
1/2 c. sugar
3/4 c. water
Juice of 1 lemon
1/2 c. shortening
1 c. packed brown sugar
2 eggs
1 tsp. vanilla
2 1/2 c. flour
1/4 tsp. baking soda
1/2 tsp. salt

In saucepan combine figs, sugar, water and lemon. Cook, stirring constantly over medium heat until thick and jam like. Set aside to cool. Mix shortening, brown sugar, eggs and vanilla. Stir in flour, soda and salt. Knead on floured surface until smooth.

Roll to 12 x 14 inch oblong, cut 4 strips 3 1/2 inches wide and 12 inches long. Spoon the filling down center of each strip. With spatula, turn in both sides to center, of each strip to enclose filling making 1 x 12 inch strips.

Press edges together and turn seam side down on greased sheet. Cut each strip in 10 pieces. Separate pieces and bake at 375 degrees for 10 to 12 minutes or until puffed and are firm to touch.
