ZUCCHINI BEEF POTATO CASSEROLE 
1 lb. ground beef
1 small onion, diced
4 medium potatoes, sliced
2 medium zucchini, sliced
2 (10 oz. ea.) cans cream of mushroom soup
2 cups shredded cheddar cheese, for sprinkling (your choice)
1/4 to 1/3 can Pringles potato chips, crushed

Preheat oven to 350°F.

Brown hamburger and then add onions. Cook till onions soft.

In bottom of casserole dish put layer of potato slices. Put down layer of zucchini slices. Spread 1/2 ground beef mixture over zucchini. Spread one can of mushroom soup over ground beef (I add just a little water to thin soup to make a little easier to spread. Repeat layering, ending with last can of soup.

Sprinkle your favorite cheese over top. Finally, sprinkle crushed Pringles to cover.

Bake at 350°F for 90 minutes or until potatoes and zucchini are soft.
