GRANDMA DORIS' PUMPKIN BARS 
Pumpkin Bars:

4 eggs
2 cups sugar
2 cups pumpkin
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1 cup vegetable oil
2 cup all-purpose flour

Cream Cheese Frosting:

1 - 8oz pkg cream cheese
1/2 cup butter
1 tsp. vanilla
2 cups powdered sugar

Preheat oven to 350°F.

Beat eggs until light. Add sugar and then rest of ingredients.

Bake on greased jelly roll pan at 350°F for 25 minutes.

Icing: Mix ingredients together until smooth.

Have the same recipe from my Mom. Mom's recipe is about 75 years old. And only calls for baking 15 minutes. It says it might look like it is not done but will finish outside the oven. Baking it 25 minutes would make it more cake like. Try 15 minutes.

The best pumpkin bars I have ever tried! I am a bit of a baking snob. Thank you for sharing this! I double the spice & add clove. I have made this before at 25 minutes. I will try like Sharon suggested today and cook for 15 minutes. Thank you Sharon! I think they will be beautiful either way. I'm so excited to try these again. Our local store has a bakery selling pumpkin bars for $1 a piece. They are just average and artificial cream cheese frosting. So Grandma Doris Pumpkin bars here I come! Nothing like old fashioned homemade cookin!

I put in 1 tsp of cinnamon & half a tsp of pumpkin pie spice. If that is too much spice for you, then I only use 1/4 tsp of pumpkin pie spice.
