ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. baking powder
1 c. chopped nuts
1/2 c. flaked coconut
2 tsp. vanilla
3 c. coarsely grated zucchini (use rind, seeds and all)
1 c. cooking oil

Beat together (using large bowl) first two ingredients with an electric mixer; set aside.

Still using mixer, combine remaining ingredients with egg and sugar mixture, until well blended and pour evenly into loaf pans. Bake 1 hour in 325°F oven.

Makes 2 loaves.
