WHOLE WHEAT ZUCCHINI BREAD 
3 eggs
3/4 c. vegetable oil
1 1/2 c. sugar or 1 1/4 c. brown sugar
1 tsp. lemon peel powder
1/2 tsp. orange extract
1/4 tsp. vanilla
2 c. grated zucchini
2 1/2 c. flour (whole wheat), unsifted
3/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. ginger
1 tsp. baking soda
2 tsp. baking powder
1/2 c. chopped nuts (pecans or walnuts)

Beat eggs; add oil and sugar. Beat well. Add flavorings and zucchini; mix well. Mix dry ingredients together and add to wet mixture. Add nuts. Bake at 350 degrees for 1 hour in small loaf pans. Cool in pan until bread removes easily. Cool on wire racks.
