WHOLE WHEAT ZUCCHINI BREAD 
1 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. allspice
1 c. whole wheat flour
2 eggs
2/3 c. vegetable oil
1/4 c. honey
1/2 tsp. lemon juice
1 1/2 c. shredded zucchini
1/2 c. chopped nuts
1/4 c. raisins

Sift flour, baking powder, baking soda, salt, cinnamon and allspice. Stir in whole wheat flour. Beat eggs, oil, honey and lemon juice with rotary beater until smooth and frothy. Stir in zucchini. Add flour mixture and stir well, but do not beat. Stir in nuts and raisins.

Turn into greased 9 x 5 x 3 inch loaf pan. Bake in 325 degree oven for 1 hour, or until toothpick inserted in center comes out clean.

So good. The crust is crumbly, the insides moist. I went with all whole wheat, sub'd cinnamon for allspice. For my 1/2 c. of nuts, I used 1/4 c. of roasted cashews and 1/4 c. of raw sunflower kernels.
