WHOLE WHEAT ZUCCHINI BREAD | |
1 c. sifted all-purpose flour 1 1/2 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1/2 tsp. allspice 1 c. whole wheat flour 2 eggs 2/3 c. vegetable oil 1/4 c. honey 1/2 tsp. lemon extract 1 1/2 c. shredded zucchini 1/2 c. chopped nuts 1/4 c. raisins 1 tsp. sesame seeds (optional) Sift first 6 ingredients. Stir in whole wheat flour. Beat eggs, oil, honey and lemon extract with rotary beater until smooth and frothy. Stir in zucchini. Add flour mixture and stir well, but do not beat. Stir in nuts and raisins. Turn into greased 9x5x3 inch loaf pan. Sprinkle with sesame seeds. Bake in 325 degree oven for 1 hour or until inserted toothpick comes out clean. Makes 1 loaf. |
