WHOLE WHEAT ZUCCHINI BREAD 
1 c. sugar
3/4 c. oil
3 eggs, beaten
2 med. zucchini, grated
1 tbsp. vanilla
3 c. whole wheat flour
1 tbsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 c. raisins
1/3 c. chopped nuts

Cream sugar and oil. Add eggs, zucchini and vanilla. Sift together dry ingredients. Add raisins and nuts to dry mixture. Combine with zucchini mixture. Pour into 2 greased loaf pans. Bake at 350 degrees for 1 hour. Let stand 10 minutes on cooking rack, then remove from pans. Makes 2 loaves.
