J. L. HUDSON MAURICE DRESSING
AND SALAD
 
MAURICE DRESSING:

1 pt. mayonnaise
3 tbsp. finely chopped parsley
1 tbsp. finely chopped onion
2 hard boiled eggs, finely chopped

Mix real well, if too thick add a little milk. Yields about 4 servings.

MAURICE SALAD:

Shred one medium lettuce.

Shred one half pound ham.

Shred one half pound Swiss cheese.

Shred one half pound chicken breast (about 1).

Shred 8 or 10 sweet gherkins.

Toss all together lightly. Make sure it is well mixed.

DRESSING:
2 tsp. white vinegar
1 1/2 tsp. lemon juice
1 1/2 tsp. onion juice
1 1/2 tsp. sugar
1 1/2 tsp. Dijon mustard
1/4 tsp. dry mustard
1 c. mayonnaise
2 tbsp. chopped fresh parsley
1 hard cooked egg, diced
salt to taste

SALAD INGREDIENTS:
14 oz. ham, cut into strips
14 oz. cooked turkey breast, cut into strips
14 oz. Swiss cheese, cut into strips
1/2 c. slivered, sweet gherkin pickles
1 head Iceberg lettuce, shredded
12-16 pimento stuffed green olives

Combine the first 6 dressing ingredients and stir to dissolve the sugar. Add remaining dressing ingredients and mix well. Combine the ham, turkey, cheese and pickles together in a large bowl. Toss together with the dressing. Divide the lettuce among plates, top with salad and garnish each plate with 2 olives.
(serves 6-8)

NOTE: Grate an onion into a shallow bowl to juice. I include the pulp to get the measurement. A great dressing!

I miss those salads. Do you happen to have their Original 7 Layer Salad? I have found some close, but none that compare to J.L. Hudson's.

Stanley Demos created the original Maurice Salad at the Netherland Plaza Hotel in Cincinnati, OH in honor of the hotel's Maitre'd whose name was Maurice. I am 82 and used to eat frequently at the Netherland with my parents beginning in 1935 or so. I KNEW Demos and Maurice! The one ingredient today's versions omit is DILL PICKLE, not gerkins and it makes ALL THE DIFFERENCE! Their juice was an ingredient in the dressing and thin slices of dill pickle were julienne d along with the chicken, ham and swiss cheese. I find Marsetti's cole slaw dressing with a bit of pickle juice added a good alternative. SO popular no wonder Hudson's and others copied...it but not exactly!

Margery is correct in the dressing recipes omission of dill pickle finely chopped. It does make all the difference in the world. My grandmother took my mother and I to Hudson's every Sunday, and I always had the Maurice. I now live in Dallas, and there are no Hudson's here. It's nice to know my daughter and I can still share a tradition with this recipe. Thank you.

I lived in Detroit for several years back in the late 60's and early 70's. Saturday was ALWAYS Hudson's for Maurice salad day. Was so sad to see the building imploded. So many wonderful memories there, like their display fixtures sell-off,(every gay man in town was there for that!!) and the furniture showrooms. I remember being very impressed w/an all black kitchen (this was in the 60's remember...) But the finale was ALWAYS a trip to the restaurant for that heavenly salad. RIP Hudson's!!

I have never heard of this dressing or salad, as I have never lived near the area... however, after reading the ingredients AND the comments... it is definitely going to be my next salad. The older recipes are the best... Thanks for submitting this!
