FAT FREE - SUGAR FREE ZUCCHINI
BREAD
 
1 c. whole wheat flour
1 1/2 c. all-purpose flour
1 1/2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
3 egg whites
6 tsp. sweetener
1 tsp. vanilla
2 c. shredded zucchini
1/2 c. crushed pineapple, drained

Combine dry ingredients except sweetener. Beat egg whites until frothy. Add sweetener and vanilla; beat one minute. Stir in zucchini; mix. Add dry ingredients and pineapple. Stir just until dry ingredients are moistened. Spray 9x5 loaf pan with non-stick spray. Bake 45-60 minutes at 350 degrees until fork comes clean.

For you that can not have sugar omit the pineapple. Tons of sugar in pineapple. Or use a jam with splenda. Yummy.

There are whole sections of the supermarket I need to avoid now due to "sucralose creep". Its getting into everything! Especially drinks. And it's not listed prominently. They hide it in the ingredient list. Even the name is insidious What are people thinking?! Say no!

This recipe is great for eliminating oil ("The Fat you Eat is the Fat you Wear") and sugar - two criminals in foods. Do NOT use Splenda or the other chemical artificial sweeteners. Substitute stevia leaf powder plus brown rice syrup and add currants for extra sweetness. Eliminate the egg by adding 1 tbsp. each tapioca and potato starch plus 2 tbsp. cornstarch to the dry ingredients. Gluten free baking mix can also be used in place of the wheat flours. I always add 1 full teaspoon of baking soda to the dry ingredients, and 1 to 1 1/2 tsp. apple cider vinegar to the wet ingredients. Mixing the wet into the dry gives you a lofty batter! Hooray for smart cooking and eating!

FYI healthy fats are actually needed for the human body for cells and hormones. Omega 3 is very important. Nuts seeds olives etc. now saturated fat from red meats are harmful. Your quote of the fat you eat is the fat you wear is not completely true. The Mediterranean Diet is the most beneficial.
