STRAWBERRY JAM WITH AGAR-AGAR 
3 tsp. lemon juice
9 c. strawberries
2 c. strawberry juice
3 c. honey
1 oz. flaked agar-agar (can get at health food store)
1 c. water

Stem berries and cut in half. Extract 2 cups of juice by mashing the berries or pressing through a strainer. Combine the juice with the water and soak the agar-agar in it for 15 minutes. Simmer mixture for 15 minutes, stirring often. Add berries and bring to a boil. Add honey and lemon juice, stirring well. Bring to 9 degrees F. (5 degrees C.) above boiling. Cook at this temperature for 5 minutes. Skim foam from the top. Spoon hot into hot sterilized canning jars to 1/4 inch from top. Complete seals. Process in a boiling water bath for 15 minutes. (This is an excellent jam which holds its shape and is not too sweet.)
