BAKED SQUASH CASSEROLE | |
2 to 3 lb. yellow squash 1 med. onion, chopped 1 tsp. salt 1/2 tsp. pepper 1 c. Ritz cracker crumbs 1 c. sour cream 2/3 stick butter 2 eggs 1 sm. jar pimentos, optional 1 c. grated cheese Cook squash and onion in butter until squash in tender. Add beaten eggs, salt, pepper, 1/2 cup cracker crumbs and 1/2 cup grated cheese. Add sour cream and pour in casserole dish. Combine remaining cracker crumbs and grated cheese and sprinkle on top. Bake at 350 degrees for 1 hour or until brown on top. |
