BAKED YELLOW SQUASH 
2 lbs. yellow squash, washed and sliced
2 tbsp. sugar
1/4 c. cream (or half & half)
2 tbsp. finely chopped onions
2 tbsp. butter
3/4 c. crushed cracker crumbs (Ritz, Escort, etc.)
2 tbsp. melted butter (to go with crumbs)
4 oz. shredded sharp cheese (if desired)
Salt and pepper to taste

Boil squash with water and a little salt and pepper until tender. Drain very well. Add 2 tablespoons butter, sugar, cream, onion, and more salt and pepper if needed. Add cheese if desired or you may sprinkle it on top. Mix cracker crumbs with 2 tablespoons melted butter. Bake at 350 degrees for about 20 to 30 minutes or until bubbly. Serves 4 to 6.

If you have cheese in other dishes you are serving, you may leave it out.
