QUICK CHICKEN FRIED RICE 
A great way to use up leftovers! You can substitute roast pork for the chicken. Scallions, onions or other vegetables can be heated in the pan with the chicken if desired.

1-2 cups leftover cooked chicken, cut into small pieces
2 boxes prepared flavored rice mix (such as Rice-a-Roni or Near East)
1-2 tbsp. olive oil

Prepare rice as directed on package. While it is cooking heat 1 tablespoon oil in a pan. Add chicken and heat through. When the rice is cooked, add chicken and stir.

Serves 4.
