EASY CHICKEN FRIED RICE 
1 boneless chicken breast, diced
1 cup white rice
1 (12 to 16 oz.) pkg. frozen mixed vegetables (I use an Asian blend)
1/2 cup soy sauce
1 serrano pepper, chopped (optional)
2 to 3 eggs
1 tbsp. butter

Prepare rice according to package directions.

Meanwhile, cut chicken breast into slices, then cube it. Melt butter in pan, add chicken and sauté until browned. Add frozen vegetables, cook until defrosted. Add soy sauce and chopped pepper (if you want it spicy). Mix everything until well blended. Push aside to make some room where you can fry the eggs. Once eggs are scrambled, stir into mixture.

Serve over rice.

Makes 2 servings.
