BANANA PUDDING MOUSSE PIE 
1 c. low-fat milk
1/4 c. unbleached flour
1 pinch of salt
1/2 c. egg substitute (4 oz.) container
1/2 tsp. vanilla extract
1 (1 1/4 oz.) pkg. reduced calorie whipped topping mix with Nutra Sweet
6 pkgs. sugar substitute or replacement (.028 oz. or.035 oz.)
1 1/2 c. finely chopped bananas (approximately 3 lg. ripe bananas)
12 sugarless graham crackers or vanilla wafers, crushed

In small saucepan, stir together milk, flour, salt, egg substitute, and vanilla. Cook over medium heat, stirring constantly until thickened, approximately 6-7 minutes. Pour custard into medium mixing bowl. Let cool, stirring occasionally to prevent skin from forming. (Mixture will look somewhat lumpy.) Set aside. Whip topping according to package directions. Set aside. When custard is cool; stir in sugar substitute and 1 cup of bananas. Gently fold in half (approximately 1 cup) of whipped topping.

Spread crushed cookie crumbs on bottom of 9 inch glass plate. Place dollops of remaining 1/2 cup bananas evenly over crumbs. Spoon on pudding and spread evenly. Spread remaining whipped topping over pudding. Chill pie for 2 hours or until firm.
