PASTA, SHRIMP, SCALLOPS WITH
WINE
 
1 lb. shelled shrimp
1 lb. bay scallops
1 c. chopped onions
2 tbsp. butter
1 tbsp. olive oil
1 c. dry white wine
1 tbsp. chicken bouillon granules
1 tsp. dried crushed basil
1/2 tsp. salt
1/4 tsp. pepper
1 can Italian style stewed tomatoes
16 oz. hot cooked pasta (I prefer linguine)
1/4 c. melted butter
1/2 c. Parmesan cheese
Parsley (opt.)

Saute onion in 2 tablespoons butter and olive oil until tender, but NOT brown. Stir in wine, bouillon, basil, salt and pepper. Bring to a boil and reduce heat. Cook 12 to 15 minutes or until 2/3 of the liquid evaporates. Add shrimp and scallops and simmer for 5 minutes or until tender. Do not overcook. Stir in tomatoes and heat through.

Toss pasta with butter; add seafood, Parmesan cheese and parsley. Serves 4 generously.

This was really good! The only thing I added was garlic which I put it with the onions. There is a lot you can add to this too if you wanted, but it was very good just the way it is!

Awesome awesome recipe, add some garlic and this tastes like heaven. First time with scallops so may have cooked them a little much but there's plenty of butter and other flavor to help out where needed.

Will make this for the second time tomorrow night. I added garlic, it helped. The stewed tomatoes were great in this dish. Be careful not to use too much oil like I did. I used angel hair pasta and it was great. I did add the parsley and I liked it.

Garlic added was a plus. A bit of cream. You can add capers, dill, lemon etc.... Make it your own creation! I also added a splash of sherry... Gives it a bolder more savory flavour.

Wow! I made this today for lunch. It's wonderful and easy. It tastes just like it came from a restaurant. I didn't have italian stewed tomatoes so I just used diced and added a little italian seasoning. I also used garlic salt instead of plain salt. To die for!

Great recipe, that leaves room for creativity! I add minced garlic, crushed red peppers, a bit more salt, a tsp of lemon juice, extra shredded parmesean cheese (about half the bag), used grape tomatoes and italian seasoning as recommended by another reviewer, and one other mystery spice, and it was delicious! It wasn't overly complicated either.highly recommend (great with Texas Toast!).
