SPUD AND SPICE CAKE 
1 3/4 c. sugar
1 c. cold mashed potatoes (can use instant)
3/4 c. shortening
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
2 eggs
1 tsp. baking soda
1 c. buttermilk or sour milk
2 c. flour
3/4 c. chopped nuts

Combine first 6 ingredients. Cream 4 minutes. Add eggs, blend well. Combine soda and milk. Add alternately with flour, blending after each addition. Coat nuts with 2 tablespoons flour and stir in. Bake in well-greased 9x13 inch pan at 350 degrees for 30-40 minutes until tests done with toothpick in center. Cool and frost.
