2 c. sugar
4 eggs
1 c. oil
2 c. flour
1/2 tsp. baking soda
1 tsp. salt
1 tsp. pumpkin spice
2 c. mashed sweet potatoes or yams
1 tsp. vanilla
1 c. black walnuts, (optional)

Combine sugar, eggs, oil, and vanilla; mix well. Add all other ingredients. Stir in nuts. Bake in greased tube or Bundt pan at 350 degrees for 1 1/4 hours or until done. Let stand in pan to cool.
