SWEET POTATO CAKE 
1 1/2 c. cooking oil
2 c. sugar
4 eggs, separated
4 tbsp. hot water
2 1/2 c. plain flour
3 tsp. baking powder
1/4 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
1 tsp. vanilla
1 1/2 c. grated raw sweet potatoes
1 c. chopped nuts

Beat oil and sugar together. Add egg yolks, hot water and dry ingredients. Stir in potatoes, nuts and vanilla. Mix well.

Whip egg whites until stiff. Fold into cake mixture. Bundt pan - 1 hour 15 minutes at 350 degrees or three 8 inch pans for 25-30 minutes at 350 degrees.
