1 1/2 c. sifted flour
2 tsp. baking powder
1/2 c. shortening
2 eggs, well beaten
2 c. hot mashed sweet potatoes
3/4 c. sugar
1/4 tsp. salt
1 tsp. nutmeg or cinnamon
1/2 c. milk
Juice of 1/2 lemon

Sift flour, baking powder, salt and spice together. Add shortening and beaten eggs to potatoes while still hot. Add sugar and beat thoroughly. Add flour and milk alternately in small amounts, beating well after each addition. Add lemon juice. Pour into a greased loaf pan and bake in a slow oven 325 degrees 1 hour. Makes 8x4 inch cake.
