“HONEY AND ORANGE GLAZED CHICKEN WITH GRAVY” IS IN:

HONEY AND ORANGE GLAZED CHICKEN
WITH GRAVY
 
1/2 tsp. orange zest
2 tbsp. orange juice
1 (6-7 lb) roasting chicken
1 tbsp. olive oil
1/2 tsp. poultry seasoning
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. honey. 1 (12 oz jar fat-free) chicken gravy
1/4 cup chicken broth

Preheat oven to 350°F.

Place chicken on rack in roasting pan.

In a bowl, combine oil, poultry seasoning, salt, pepper, and zest. Rub over entire chicken. Roast for about 90 minutes.

In a bowl, combine honey and orange juice. Brush mix over entire chicken. Roast additional 15 minutes.

Transfer chicken to platter, skim fat from pan, discard. In a pot, over medium heat, combine gravy, pan juices, and broth. Cook, until slightly thickened, stirring occasionally, for about 10 minutes.

Serve chicken with gravy.

I tried this tonight. The only difference I had was that instead of a whole chicken, I used thin sliced chicken breast halves as that's all I had on hand. This was very good. It needed a bit more intense flavor and a tad more salt, but nothing different. The flavor itself was fantastic. Thanks for the post!
