TOMATO, SHRIMP & CHEESE PIE 
FILLING:

1 1/2 lbs. shrimp
4 tomatoes
1 whole egg
2 egg yolks
2 tbsp. basil
3 tbsp. chives
1/4 lb. butter
1/2 c. mayonnaise
2 green peppers, chopped
1/2 chopped onion
1 lb. grated Jarlsberg cheese
1/2 c. chopped parsley
3 cloves garlic, finely chopped
Salt & pepper

CRUST:

1 1/2 c. flour
1/4 lb. butter
Dash of salt
Water to blend

CRUST: Mix flour and butter in medium bowl. Stir until mixture resembles cornmeal. Pour in water, add salt and stir. Place on board, roll pie crust. Place in 11" pan.

FILLING: Cook shrimp until just done. Saute basil, chives, garlic, parsley, salt and pepper, onions, peppers in butter. Mix eggs and mayonnaise in large bowl, add cheese. Cut tomatoes in chunks, add to cheese mixture. Add shrimp and vegetables to cheese mixture and mix well. Put into crust. Sprinkle with bread crumbs and paprika. Bake at 350 degrees for 45 minutes.
