EASY CINNAMON COFFEE CAKE 
Cake:

1 cup all-purpose flour
3 tsp. baking powder
1/2 tsp. cinnamon
1/2 cup milk
1/2 cup sugar
1/2 tsp. salt
4 tbsp. butter, melted
1 egg

Topping:

1/4 cup sugar
1/2 tsp. cinnamon

Preheat oven to 350°F.

Mix cake ingredients in bowl and pour into a greased 8x8-inch pan. For topping, mix 1/4 cup sugar and 1/2 tsp. cinnamon and sprinkle on top.

Recipe may be doubled.

Bake at 350°F for 15 to 20 minutes.

Loved it. So easy and didn't have to go to the store for ingredients. Made the first time on a Sunday and requested to make it again on Tuesday!!! I doubled the recipe and added 1/2 teaspoon of vanilla. Hubby took it to work and it was a big hit. I have an order for 6 more from the single guys he works with. YUMMY!!!

Easy and quick! Love that the ingredients are stuff I almost always have on hand. I made this recipe today for my husband and myself, but I am saving it for when we get unexpected or overnight company. The coffee cake was moist, and the topping I doubled and it made a nice crust on top.

I made this recipe for a brunch and it was a hit. I added a few walnuts to the batter and then added brown sugar, flour, cinnamon, butter and more walnuts for the topping. I then made an icing and drizzled it over the top. It was so moist and the best part was that it was so easy to make and everyone raved about it.

I've never made a coffee cake before, and I've never had one as delicious as this one. Soft, moist, sweet - like a sugar cinnamon donut that's not dried up and cakey. I made this at 2AM, drowsy, and taking way too long to measure out 6 ingredients. I made two big mistakes - I forgot milk, and had to use Half & Half, I forgot the egg, and had to dump it out of my baking pan and remix it, then I forgot the cinnamon and sugar until I'd already taken it out. Then when I took it out, I dropped it on the counter and it flatted out in places. I'm a disaster.

STILL it was delicious and cooked perfectly in 15 minutes. My husband even left me a note in the morning telling me how good it was.

Fast to become our family favorite! Kids beg their dad to make it on Sunday mornings. I add a crumble to the top after cooking it half way through. Pecans, two spoons of flour, two spoons of brown sugar, two spoons of oat meal and 1 spoon of butter. Add just a bit of cinnamon and nutmeg and sprinkle over the top and finish cooking. The best!

This was fast and easy, if you have a craving for a basic coffee cake and not a lot of time. Definitely add vanilla. It's not super sweet, which I like. Can easily be enhanced with fruit. Would make again

I made this recipe gluten free by subbing Pamela's Artisan flour for the regular. Also switched the sugar in the recipe to dark brown and for the topping a mixture of 2 tablespoons melted butter, 1/4 teaspoon cinnamon, 1/2 cup pecans & 1/4 cup dark brown sugar. The topping was gloppy to put on, but made this amazing crusty, sugary praline like top.

This was delicious! I made some changes by making it with white whole wheat flour, substituting half of the sugar by stevia, and using 2 tbsp. of coconut oil. It turned out perfectly moist and fluffy! At first, it did have a bitter aftertaste (probably because of the flour) but I left it out for another day and it was gone!
