“BUNDT POUND CAKE” IS IN:

BUNDT POUND CAKE 
3 cups sifted flour
1 tsp. salt
1/4 tsp. baking soda
1 cup butter
3 cups sugar
6 eggs
1 tsp. vanilla
1 tsp. almond extract
1 cup yogurt

Sift together flour, salt and baking soda. Cream together butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla and almond extract. (Total beating time: 10 minutes - do not overbeat.)

Add dry ingredients alternately with sour cream or yogurt, beating well after each addition. Pour batter into a greased 10-inch Bundt pan.

Bake in a preheated 325°F oven for about 1 hour or until a toothpick inserted in middle comes out clean.

Cool upside down on wire rack for 10 minutes. Run a blunt (butter) knife around edges of pan to free edges of cake. Remove from pan. Cool on wire rack.

Dust with confectioners sugar, drizzle with confectioners icing or melted chocolate, if desired.

Cooks Note: If you have a smaller 6 cup Bundt pan, this recipe may be halved as follows:

1 1/2 cups sifted flour
1/2 tsp. salt
1/8 tsp. baking soda
1/2 cup butter
1 1/2 cups sugar
3 eggs
1/2 tsp. vanilla
1/2 tsp. almond extract or almond oil
1/2 cup yogurt

Follow directions above, except use batter to fill a half-size (6-cup) Bundt pan. Check the cake at 45 minutes to see if it is nearly done. Bake until a toothpick inserted in middle comes out clean.

Note: Sour cream may be used in place of yogurt for a richer cake, if desired.

I have made this recipe eight times now, and used some variations. As the recorder mentions, sour cream can be used in place of the yogurt. For a very rich cake I used regular sour cream, for less fat I used no fat sour cream, for the richest flavor I used ricotta (that was the best, my family ate it so quickly after dinner, and it was requested that exact way every time thereafter.) ... I have also used applesauce in place of the yogurt (not so good) for flavour variations, of course, any flavor can be added. I have added ground Ghirardelli sweet chocolate, Hershey's cocoa, ground fresh almonds, etc. This basic recipe is one anyone can easily use and adjust to personal and familial preferences and is my favorite.

I could not find my bundt pound cake recipe that I used last year, so I tried this recipe instead. I generously greased the bundt pan and had to bake it ten minutes longer than the recipe called for as the inside was still gooey when tested. I cooled the cake EXACTLY as specified in the recipe and used a butter knife to try and free the edges. Note the word TRY, as this cake refused to come out of the bundt pan! When I used the other recipe, the cake slid out effortlessly. Now I have company coming and a cake stuck in the pan. Not good. I will NOT be using this recipe again!

I made this with whole milk ricotta rather than yogurt and my husband loved it! Says it's now his favorite dessert I've made (that's saying alot!) Served with a simple strawberry shortcake topping (2 cups sugar, 4 cups strawberries, 1 tbsp. lemon juice) and whipped cream.

Moist and delicious but overly sweet! Made the half-recipe for a small Bundt pan, will try again with 1/2 cup less sugar. Let me know if anyone has tried this.

Very easy to put together. Thankfully I read all the reviews and caught the one that mentioned it was really sweet with 3 cups of sugar. I cut the sugar to 2 cups and was very happy that I did, for me I would go down to 1 1/2 cups. Husband liked it, I would like to make some of the changes others did. Enjoy!
