EASY CINNAMON COFFEE CAKE 
Cake:

1 cup all-purpose flour
3 tsp. baking powder
1/2 tsp. cinnamon
1/2 cup milk
1/2 cup sugar
1/2 tsp. salt
4 tbsp. butter, melted
1 egg

Topping:

1/4 cup sugar
1/2 tsp. cinnamon

Preheat oven to 350°F.

Mix cake ingredients in bowl and pour into a greased 8x8-inch pan. For topping, mix 1/4 cup sugar and 1/2 tsp. cinnamon and sprinkle on top.

Recipe may be doubled.

Bake at 350°F for 15 to 20 minutes.

Made a delicious modification. Added one teaspoon of instant (pumpkin latte flavored) coffee to the melted butter and then mixed it in... All I could say was WOW!

I made this exactly as the recipe calls for. It was nowhere near done at 15 mins, and opening the oven to check that early made the cake fall. It took 25 mins to cook. I'll try it again though, just won't open the oven until the 25 min mark.

This was very tasty and simple to make. I made some variations which included doubling the recipe, adding 1/2 tsp of both vanilla extract and almond extract, I also made a crumb topping with flour, brown sugar, pecans, and cinnamon. It was fabulous!

This cake has a delicious taste. The topping is very good too. Only one thing...it is too delicate and too airy. It should have more substance to it. you pick it up and it crumbles. Don't know why...more flour needed? Maybe.

Made this for the first time tonight. I like the idea of putting some topping on the bottom or middle of the cake. I had too much for the top so some of it is loose instead of attaching nicely to the cake. Sampled just a small piece though and it tastes good. Will definitely make again.

I absolutely loved it! And the best thing is that this cake is so versatile that you could put a new spin on it and never make the same cake twice. I poured some syrup over mine and next time I'll try adding some apples to it.

I took this recipe and made cup cakes. Then I took 3 baking apples, sugar, cinnamon, and a touch of vanilla into a saucepan. I then scooped a little out of the cupcakes and filled with the apple/cinnamon mixture. Topped with a vanilla frosting from scratch. Yummy.
