APPLESAUCE COFFEE CAKE 
1 3/4 cups all-purpose flour, divided
1/2 cup sugar
1/2 cup (1 stick) butter
1/4 cup chopped nuts
1/2 tsp. ground cinnamon
1 1/2 tsp. baking powder
1/2 tsp. baking soda
2 beaten eggs
1 cup applesauce
1 tsp. vanilla
1/2 cup raisins (optional)

Preheat oven to 375°F.

In a bowl combine 3/4 cup flour and sugar; cut in butter. For topping remove 1/2 cup crumb mixture, stir in nuts and cinnamon. Set aside.

To remaining crumb mixture add remaining flour, baking powder, baking soda, add eggs, applesauce and vanilla; beat until well blended. If desired, stir in raisins. Pour into a greased 9x9x2-inch baking pan. Sprinkle topping on batter.

Bake at 375°F for 30 to 35 minutes. Serve warm.

My husband pronounced this one "perfect". We were both pleased with how much applesauce it uses -- no milk at all -- which of course, helps the applesauce flavor really come through. I added 1/2 tsp. of salt because I thought the batter tasted kind of flat without it, and was happy with the outcome.

Easy to prepare, I add 2 chopped apples (softened) and 1/2 teaspon cinnamon and 1/4 teaspoon nutmeg to the batter.
