APPLESAUCE MUFFINS 
1 c. butter
2 c. sugar
2 eggs, beaten
2 c. applesauce
2 tsp. baking soda
4 c. all-purpose flour
1 tbsp. cinnamon
1 tbsp. allspice
2 tbsp. vanilla

Preheat oven to 350°F. Cream butter and sugar; add beaten eggs. Heat applesauce and stir in baking soda. Sift together flour and spices. Alternately add applesauce, sifted flour and vanilla to the creamed mixture.

Bake in greased muffin tins until light brown, approximately 15 to 20 minutes. Batter will keep, covered, in refrigerator for several days.

This recipe is super yummy. Definitely can't eat only one!! Only problem is this only makes 1 dozen, so when making for 20 kindergarteners. I had to make more-not a huge deal, just lettin ya know. Enjoy-well worth it!

I just found this recipe when looking through my pantry for something to take to a pitch in at work. These are absolutely delicious and super quick and easy! Mine turned out a bit crunchy on the outside and has a dense moist center. Try these for a great autumnal treat! I know these will be a hit.

These turned out well - I always find muffins made with butter instead of oil a little dense, but these were not too dense. I added a few chopping nuts and cranberries to add some interest. I got 2 dozen muffins from the recipe using a pretty standard sized muffin tin.

AWESOME RECIPE!!!! We made a triple batch using our homemade apple butter. Then we split it into 4 bowl and made plain apple, apple pear (using our canned pears), apple berry (with frozen blue, black, and strawberries) and apple banana (just sliced banana into the batter). All the muffins turner out awesome!
