MICROWAVE RAISIN BRAN MUFFINS 
1 c. bran, raw unprocessed
1 c. all purpose flour
1/2 c. raisins
1/4 c. granulated sugar
1 1/4 tsp. baking powder
1/2 tsp. cinnamon
1/4 tsp. baking soda
1/4 tsp. salt
3/4 c. milk
1 egg
1/3 c. vegetable oil
1/4 c. molasses

In a bowl, blend together bran, flour, raisins, sugar, baking powder, baking soda, cinnamon and salt. Blend together milk, oil, and molasses in another bowl. Add eggs to bran flour mixture alternately with molasses mixture. Mix until ingredients are just moistened. Do not over beat. Spoon batter into paper lined muffin cups in a micro-safe cupcake pan. Don't fill them more than 2/3 full.

Microwave at MEDIUM HIGH power for 4 minutes, rotating dish at least once. Rest 3 minutes. Microwave again at HIGH power for 2-3 minutes or until muffins test done. They will still be a little soft in center. Let muffins stand on counter for a few minutes before removing from pan. Serve warm with butter. Makes 12 muffins.

Since microwave ovens vary in power, you may need to adjust your cooking time.
