RUTH'S GROUND BEEF ZUCCHINI
CASSEROLE
 
1 lb. lean ground beef
1 med. onion, chopped
1 lb. zucchini, unpeeled, chopped
1 can cream of mushroom soup
3/4 c. grated sharp cheese
Salt & pepper to taste
Seasoned salt to taste
3/4 c. crushed corn flakes

Saute ground beef and onion; drain. Cook zucchini until tender. Put half of meat mixture in casserole; add zucchini and then remaining meat mixture. Cover with soup and then cheese. Sprinkle with corn flakes. Bake at 350 degrees for 40 minutes.

This was totally awesome. It had a great flavor and was very filling. I substituted bread crumbs for the corn flakes because I didn't have any. People that didn't like zuchhini loved it!

This was excellent! I added some extra seasoning to the ground beef, omitted the onion (didn't have one!) sautéed mushrooms with beef, and added oraborio (Italian rice-partially cooked) on top of the zucchini layer!

It is summer in Michigan and even though we only plant one zucchini plant we can barely keep up with the thing. Desperate for a new use for this summer favorite I tried this recipe, mostly out of desperation LOL. I will admit I was not overly optimistic. But, I will tell you I was pleasantly surprised at how good this was! Next time I might try adding some peppers and Polish sausage as a substitute for the beef burger.
