CAPPELLINI E SCAMPI | |
1 lb. sm.-med. fresh shrimp 3 tbsp. butter 1/2 onion, chopped 1 tbsp. flour 3 tbsp. ketchup 1/4 c. sherry 1 lb. angel hair pasta 3 tbsp. capers Romano cheese, grated 1 c. heavy cream or Half and Half Melt butter in large saucepan. Saute onions until tender. Add shrimp and cook for about 3 minutes. Add flour and cook for about 1 minute. Add ketchup. Slowly stir in cream. Now remove enough for children, then add sherry and capers. Cook pasta and mix with sauce. Add Romano cheese if desired. Serves 4-6. |
