CANLIS' SCAMPI 
2 lb. lg. prawns (no tail)
1 oz. butter
1 oz. olive oil
1/4 tsp. black pepper (prefer fresh ground)
1/4 tsp. salt
Juice of 2 lemons
1 sm. whole garlic clove, crushed

Into a large skillet, place olive oil. When simmering, add scampi and allow to cook until golden brown. Reduce heat and add butter, garlic, salt, and pepper.

When well blended, raise fire to very hot. Add lemon juice and cook for about 1 minute, constantly stirring or shaking. Serve as an appetizer or entree.
