SPINACH FLORENTINE 
1/4 c. butter
1 lb. fresh mushrooms, sliced
1/4 c. onion, chopped
1/2 clove garlic, minced
1 tsp. salt
1/4 tsp. seasoned or fresh pepper
1/4 c. dry white wine
2 pkgs. frozen spinach, thawed and drained of all water
1 c. Cheddar cheese, grated

Heat butter in a fry pan or skillet. Add sliced mushrooms, onion, garlic, salt, and pepper. Let mixture saute about 5 minutes. Add wine and continue to saute until liquid reduces to almost a glaze. Butter a round casserole dish and place half the spinach in the bottom. Pour half the mushroom mixture over the spinach, then half the cheese over mushroom mixture. Repeat the layers. Bake in a preheated 350 degree oven for 25 minutes. Makes 6 to 8 servings.
