RHUBARB COBBLER 
1 tbsp. butter
1 c. sugar
1 egg
1/2 c. milk
2 tsp. baking powder
1 1/4 c. flour
1/2 tsp. salt
2 c. rhubarb (cut fine)
1 c. sugar
1 c. boiling water

Mix butter, sugar, egg, milk and baking powder, flour and salt together. Pour into a greased 9 inch pan. Mix rhubarb, sugar and boiling water together. Pour over batter mixture. Bake at 375 degrees for 40 minutes. Rhubarb will be on bottom when done. Serve warm with Cool Whip.
