TOMATILLO & POBLANO SALSA 
This recipe is so easy and inexpensive compared with prepared salsas. This is known as a green salsa. It is mild, but you can add more chipotle peppers in adobo sauce to increase the heat. Look for canned chipotle peppers in Mexican food section of grocery store.

1 lb. tomatillos
1 roasted medium poblano pepper
1/4 slice chipotle peppers in adobo sauce
1/4 cup fresh cilantro
1/4 sweet onion, roughly chopped
2 tbsp. red wine vinegar
salt and pepper, to taste

Roast poblano chili pepper under broiler or on barbecue grill until charred. Remove papery skins from tomatillos and chop roughly.

Put charred poblano in paper bag and close. Let sweat in bag for about 10 minutes to cool and then pull off the charred skins and remove seeds. Roughly chop.

Put all ingredients into a food processor or blender and chop to desired consistency. Add salt & pepper to taste.

Use this salsa with all Mexican foods. Especially good on tacos or used as a dip with tortillas chips. Enjoy!
