ZUCCHINI GROUND MEAT CASSEROLE 
1 med. zucchini, cubed
1/2 c. shredded Cheddar Cheese
1 lb ground beef (any ground meat)
1 sm. onion, finely chopped
1 can Rotel diced tomatoes and green chilies
1 can corn (beans or additional vegetable of your choice)
2 1/2 c. stuffing mix
1/2 block Philadelphia Cream Cheese (cut in small cubes)
1 tablespoon butter

Cook cubed zucchini in boiling, salted water for 5 minutes. Sauté onion in small amount of butter. Cook ground meat until browned. Combine first 6 ingredients. Prepare baking dish by smearing butter on bottom and sides.

Layers: Place 1/2 of mixture in casserole, sprinkle Philly cubes, sprinkle layer of stuffing mix, dot with butter. Add another layer same as before.

Bake in preheated oven 350°F for about 30 minutes.

I make this in my toaster/convection oven and it is totally awesome! Enjoy! Leftovers microwave very well.
